                                            Sweet Potato Enchilada's We are offering two amazing dishes this week as we are also offering Sweet Potato Enchilada's.  We love bringing you the enchilada our way, with creamy sweet potato, Spanish rice and a topping of Queso. A great vegetarian option! This Mexican dish originated with the Mayans, as simple as wrapping a tortilla around fish. Upon searching, I thought I'd add some fun facts about Mexico:  It was Mexico that introduced chocolate to the world. The green bean has been cultivated in Mexico for about 7000 years. Mexico City sinks about ten inches each year. 
                                                      GET YOUR THAI  ON! Starting today at Big Muddy's we are featuring  Chicken Thai with peanut sauce over rice noodles! We will have this as our special for $12.99 through December 16th! Part of the reason for the blog was to experience some different ideas and food with Big Muddy's. We hope that all will enjoy our adventure into some different cultures. When traveling in Thailand they often serve beer with ice cubes in it with food dishes. We will be happy to serve one of our many beers on tap and if you want ice cubes in it! Another fun fact about Thailand is that there is never any baking done as it is rare for a person to own an oven. We enjoy your feedback and please enjoy our Thai dish with us this week!
Brunch: On Sunday Morning is 10:00 A.M. to 2:00 P.m. If you live in Burlington, or anywhere surrounding the area you are missing out if you do not try our brunch. Once you are seated you start with an amazing view of the Mississippi, you have a carver waiting to carve slow roasted Beef or Ham as you enjoy the many breakfast and lunch items. Our Delicious Barbecued ribs and Fried Chicken are just a few mouth watering items to list as is our full salad bar with chef prepared salads. We always offer $2.50 Bloody Mary's and $2.00 Mimosa.
